Pumpkin Ketchup

Ingredients:
800 g of pumpkin
| 1 yellow onion
|
Olive oil
| 5 tbsp rice vinegar |
40 g brown sugar
| 1 pinch of salt
|
1 pinch of pepper
| 4 star anise |
4 cloves |

Preparation:
Wash the pumpkin, remove the seeds and cut it into cubes. It is not necessary to peel it. Peel and roughly chop the onion. Cover the bottom of a saucepan with olive oil and heat it. Put all the ingredients in the pan and cook for 1 hour covered over low heat. Stir from time to time. When the pumpkin is tender, remove the anise and cloves, mix everything using a blender or a hand blender, then pass the ketchup through a chinois. Adjust the seasoning if necessary. |
